I do wonder if some kind of stiffening of the zipper would help - say some long cable ties (with the ends cut off) sewn into pockets either side of the zipper.
(I'd still make sure I had a Plan B that didn't involve opening the zipper, perhaps some kind of cutter tethered to your wrist to let you cut yourself out if the zipper jams.)
BTW: Does the sleepsack have internal sleeves? If so, how are you pulling on the cords to open/close the zipper? Are the sleeves open-ended, or are you manipulating the cord through the fabric? What are you doing to make sure you don't lose the end of the cord?
all of my sleepsacks have internal sleeves. the darlex and latex ones have closed ends and two seams about 5-7" apart from each other. the canvas one from the straghtjacket shop as shown in the picture, has open ended sleeves and is basically a tube stitched to the side webbing in the middle only, so it has a lot of movement available, but the sleeves are still escape proof unless the zipper is opened. in the picture on the previous page, you can see a blue piece of paracord on the zipper pull. that is what i grab with my mouth to open and close the zippers on my sleepsacks.
with the darlex sack, if i pull the zipper all the way up to the top of the collar, the easiest way to get out is by feeding another 4' of paracord through the loop of paracord on the zipper pull then standing up, i can grab it through the fabric, and using my chin, keep the collar flat and pull the zipper down. the other way which is much tougher, is by grinding my neck against the bed like a snail so that the collar is flat and the zipper gets moved down to the point where i can simply grab it with my teeth and slide it down that way.
the latex sleepsacks, escape is simply once i get sweaty enough, i can slide my arms out of the sleeves and free myself.
the paracord on the zipper pulls are all long enough that they will always be withing reach of my mouth when zipped up.
my plan b would be to yell for help from a family member, even though that would be super embarrassing. to get caught like that.
