Easy, just put the bottle above you instead of the bucket.
I would of course make an intermediate piece with a lever and a pot. Every time the jar is completely filled with water, it tilts downwards so that you get a whole lot of water all at once and the empty jar tilts back up to be filled again.
Like a Japanese Shishi odoshi or:
