Would it be possible to change it so if you don’t keep your tongue on the tube the water goes all over you?

Easy, just put the bottle above you instead of the bucket.
I would of course make an intermediate piece with a lever and a pot. Every time the jar is completely filled with water, it tilts downwards so that you get a whole lot of water all at once and the empty jar tilts back up to be filled again.
Like a Japanese Shishi odoshi or:
