I sorry, you got me. True boiling water does evaporate, and leave the impurities behind. But a funny thing happens when you do this in a pan or tea kettel, the impurities cling to, and become solid on the side of the pot.
I grew up with a wood cook stove and my parents always keept a tea kettle on it to have hot water all winter long, it started out in the fall holding about 3 quarts of water by spring it would barely hold 1 quart. It would also be about five times heaver because of all the scale.

This also happens in modern day hot water heaters.
