There are clocks with 8 day and 30 day winds. They are mechanical, and not electric, which meets one of your criteria, but still, it would take some imagination or engineering to create something.
How about a key in the mail. Do it on a week day, take the key in an envelope to the post office and drop it off. go home and lock yourself up, and wait for the mail.
Also, there are electric releases that release when the time is up, OR, when the power fails. That is, they require power to stay locked.
I know this is all vague, and I haven't tried these myself, but I hope you have a good time.
