I usually use ve. vim or emacs if ve is not available. These are plain text programmers editors with out all the plugged up plumbing.
Coders for Windows might look for Notepad++(Free). Same thing, but with syntax highlighting for program code, which helps things stand out a bit better. Very useful for languages like HTML and XML also.
