I had the possibility of looking inside a cheap "Rockfort Electronic Safe".
They are sold cheap around here in DIY shops, and even cheaper second hand.
(The owner was unfortunately not interested in letting me make any "adjustments")
The mechanism is pretty simple:
A (very weak) spring holds the solenoid plunger in front of the moving parts.
When the correct code is punched, the solenoid will be energized and move the plunger out of the way for a few seconds.
There is also a key-override, that simply pushes down on the plunger at the point marked with a yellow arrow in the picture.
This is important, because the batteries are inside the safe! If the batteries go flat, the safe is LOCKED.
In the quality electronic locks I've met otherwise, the batteries can be changed from the outside.

Regarding pervertability:
It will be very easy to let any other microcontroller deliver the signal to the solenoid.
It will take a bit of extra thinking to make the system fail safe, but the key backup option really is an OK solution.

The two first methods should IMHO not work if the box is bolted to something sturdy.
