It would help a lot if we knew what you plan to do.
Which liquid are you going to use, how big is the container (if any) and what material is it made of.
At the moment, there are just too many options to recommend any switch.

Ambiguous indeed! In a completely different direction -- which could be completely inappropriate to whatever you're after -- you could consider a weight-based switching system in which a specific level of whatever the liquid is moves the unit from on to off or back again.
